Blueberry Oats
- 1/2 c. oatmeal
- 1/2 T. maple syrup
- 1 t. flax seeds
- 3/4 c. water
- 1/4 c. soy milk
Heat the oats in a pan with maple syrup and spices of your choice (nutmeg). When aromatic, add hot water and plant based milk. Continue to stir and heat on low until you get the desired consistency and liquid has reduced.

Greek Parfait
- 1/4 c. granola
- 3/4 c. greek yogurt
- 1/4 c. mixed berries
Layer granola, berries, and yogurt in a dish of your choice.

Tomato Basil Scramble
- 1 egg + 3 egg whites
(or 4 egg whites)
- 1/4 c. cherry tomatoes
-1/8 c. reduced fat feta
- 3-4 basil leaves
- 1c. baby arugula
Sauteé halved tomatoes, basil, and spices (of choice) in a heated pan (sprayed with olive oil). Next wilt the arugula on top, then pour over egg mixture and cook until finished.
(or 4 egg whites)

Elevated Avocado Toast
- 1 slice sprouted grain toast
- 1/4 avocado
- 1/2 lime
- 2 basil leaves
- 1 egg
- 2-3 slices of tomato
- sprouts or micro greens
First, toast the bread. In a heated and sprayed pan, heat the tomato with chopped basil and spices ( salt, pepper, etc.). Remove when aromatic and slightly wilted, then cook the egg in the same pan.
Meanwhile, mash the avocado with basil, pepper, and lime juice.
Layer your sandwich with the egg, tomato, avocado mixture and sprouts.
